
Healthy and Light Salad with Avocado and Blue Cheese: I first ate a similar salad in one of the Ambiente restaurants in Prague and since then, it has been my favourite meal to get there when I’m visiting. When I got back home I missed it, so I came up with a recipe of my own, where I have tried to be as close to the original as possible, but as I don’t know the exact recipe, the result will inevitably be a little different – or even better! I have added some tweaks of my own (like caramelised walnuts). What I love about this salad is the fruity sweetness finely balanced with the distinct savoury flavour of the blue cheese. I hope you enjoy this salad as much as I do, it is guaranteed to lift up your mood and make you smile!
Ingredients
- 120g Cantaloupe melon
- 200g blue cheese (I use Blue Stilton, but you can use Gorgonzola Piccante or other)
- 120g fresh strawberries
- 120g ripe avocado
- 40g Kalamata olives
- 120g lamb’s lettuce
- 120g round lettuce
- 80g freshly squeezed orange juice
- 60g Extra Virgin olive oil
- 40g honey
- 60g walnuts, coarsely chopped
- 1 tbsp butter
- 1.5 tbsp caster sugar

Method
Dice the avocado, strawberries, Cantaloupe melon and blue cheese and mix gently. Add lamb’s lettuce, round lettuce (torn into small pieces) and Kalamata olives.
Mix the freshly squeezed orange juice with olive oil and honey and stir well, until all honey is dissolved and the dressing is nice and smooth.
Now prepare the caramelised walnuts: in a small frying pan, melt the butter over medium heat and add the walnuts and caster sugar. Stir continuously, until you get a fine, even coating of light brown caramel on the surface of the walnuts. Immediately take the caramelised walnuts out of the frying pan and lay them separately from one another on a sheet of parchment paper and leave them to cool down.
Now pour the dressing over the salad, mix gently and add the caramelised walnuts on top.
